Description
The Japanese amberjack or yellowtail is a spiecies of jack fish in the family carangidae, native to the northwest Pacific Ocean. The small wild fry (called mokako) is caught every May and put in cages in the sea to be sold to aquaculturists who grow them untill they reach the weight of 3 kg called hamachi. The hamachi are eaten either cooked or raw mainly in the colder month when the meat has a higher fat content.
